Chickpea Rotini

We've tried the Barilla Red Lentil Penne and loved it, so we were excited to give the Chickpea Rotini a try as well! Instead of the traditional bowl of pasta with sauce and parmesan on top, we decided to create our own Baked Rotini with Meatballs. We took the easy way out and used one of our favorite jarred sauces and pre-made meatballs. We first cooked the pasta and, much like the Red Lentil Penne, it cooked to a very nice al dente texture. We mixed the pasta with the sauce and layered half of the mixture in the bottom of a glass baking dish. Then we dolloped a 15 oz. container of ricotta cheese, evenly in the dish, and covered that with a layer of 2 cups of shredded mozzarella. Next, we evenly arranged the meatballs in the dish and covered those with the second half of the pasta and sauce mixture. Finally, we covered the top with 2 more cups of mozzarella. We baked this at 350 for a total of 30 minutes and it came out great! Very good flavor and texture and, most importantly, it stayed very saucy and was not dry at all. The Barilla Chickpea Pasta held up very well and did not get mushy and starchy, like traditional pasta can sometimes become in baked dishes. All in all, it was a very delicious and satisfying dinner! And, this pasta is a great source of plant-based protein and fiber! And, it's gluten-free, if that's a diet concern for you. How can you go wrong? I would definitely recommend this pasta.
